I recently heard about these fantastic camper trailers so went and checked them out;

They have two double beds, which are roughly at chair height
Look pretty easy to put up (With a little 'tall' assistance)
Have a kitchen at a kitchen at a great height
When folded up, they are low enough that someone in a chair can help to load stuff on the luggage rack.

With a portable toilet, you could go anywhere!
